Café La Casona is a 100% shade-grown Arabica coffee of the Bourbon variety, cultivated at 1,400 feet above sea level in Las Marías, Puerto Rico. The beans are carefully dried, roasted at low temperatures, and classified by size — a meticulous process that results in a coffee distinguished by its exquisite flavor and remarkable aroma.
The Natural Process Premium is characterized by beans left unpeeled in the fruit to ferment briefly before being sun-dried. The duration of the fermentation and the amount of mucilage determines the final dark color of the bean. Similar to the Honey Process, Natural Process coffees vary widely, but they are generally celebrated for their complex flavor profile, muted acidity, and particular sweetness derived from natural fermentation.
