Café La Casona is a 100% shade-grown Arabica coffee of the Bourbon variety, cultivated at 1,400 feet above sea level. The beans are carefully dried, roasted at low temperatures, and finally classified by size. This meticulous process results in a coffee distinguished by its exquisite flavor and remarkable aroma.
Café La Casona Natural Process Premium is characterized by beans that are left unpeeled (in the fruit) to ferment briefly before being sun-dried. The duration of the fermentation and the amount of mucilage determines the final dark color of the bean. Similar to the Honey Process, Natural Process coffees vary widely, but they are generally celebrated for their complex flavor profile, muted acidity, and particular sweetness derived from the natural fermentation.
