Our Honey Premium delivers a unique sweetness and complexity through the exquisite Honey Process. The method begins by depulping the cherries, but the beans are purposefully left unwashed and allowed to dry with a generous layer of sticky mucilage (fruit pulp residue) clinging to the parchment. This natural fermentation is carefully controlled, and the amount of mucilage left directly influences the final color and flavor profile.
