Café La Casona is a coffee cultivated at 1,800 feet above sea level. It´s 100% arabica coffee of the bourbon variety planted in the shade. These beans are dried and roasted at low temperatures and later classified by size. The sum of these careful processes results in a coffee distinguished for its aroma and exquisite flavour.
Café La Casona Honey Premium features honey processed coffee beans. Honey process means the cherries are depulped and then left to dry without washing, resulting in beans with mucilage (fruit pulp residues). These are left to ferment for different amounts of time. The longer the fermentation process and the more mucilage, the darker the color acquired by the bean. Honey coffees can have many variations within their process, but in general they are known to be more complex in flavour, of muted acidity and particular sweetness due to fermentation.
